ToggleIngredients for Savory Sausage with Zucchini Noodles
Buy 10 oz package of zucchini that is cut into spaghetti (I got it at Whole Foods but many grocery stores sell it)
3/4 lb Mild Italian sausage (or spicy if you prefer that)
1/4 cup green onions, sliced
1 package (about 2 cups) of mushrooms, I used shiitake for mine
1 cup (or 1-1/2 cups) of red spaghetti sauce, I used one with basil/garlic
Optional: Cheddar cheese (or mozzarella cheese) to sprinkle on top
Directions
In a large pan, sauté the sausage until it is not quite browned, but cooked a little, about 7 – 10 minutes on medium heat. Add your zucchini ‘noodles’ and the green onions as well as the mushrooms. Continue Sautéing everything together until it is cooked completely. Add your red sauce, the amount of red sauce you use is up to you, some people like a lot of sauce, and others don’t.
Alternatively, you could assemble this dish in a prettier way. It adds just one more pot to the recipe, and if you don’t mind doing dishes, use the pot to cook the noodles. In other words, cook the zucchini noodles separately, by Sautéing them for about 5 minutes in some oil or butter. When thoroughly cooked, plate some on a dish. Then put the ‘sausage meat sauce’ on top of the noodles, and sprinkle with cheese!
