Ingredients
3 bags of fresh spinach (not frozen)
1 cups heavy cream
1/2 cup melted butter
4 cloves garlic, minced
1/3 cup leek, washed/finely chopped (alternative, scallions) 1 small yellow onion, minced 1/2 cup shiitake mushroom
1/2 cup Manchego cheese, grated
3 slices mozzarella cheese
1/4 cup fresh Asiago (or Parmesan) cheese, grated
Sea salt and pepper to taste Optional: 1/4 tea cayenne pepper
Directions
Heat a large pot with the spinach and some water to wilt it, stirring constantly. Drain the liquid and set aside. Next, melt butter in a skillet and sauté the leek, onion and shiitake mushrooms. Once softened, stir in the spinach and heavy cream. Add the mozzarella slices and stir until melted then sprinkle the Manchego and Asiago cheese until melted. Continue to stir until thickened. Season with salt/pepper and cayenne if desired.
