Ingredients
1 cup prunes (about 6 – 8 oz)
1.5 cup walnuts (alternatively, you may use almonds)
1/2 cup shredded coconut
1 tea shelled hemp seed (or ground flax seed)
1/4 tea Himalayan sea salt
Optional: 1/2 tea vanilla extract
Directions
Grind nuts in your food processor until they are fine. Add the prunes, shelled hemp seed, salt (and/or vanilla) then mix with your hands (I use gloves to keep things sanitary). You could also pulse this. Take chunks off and make about 20 little balls, place on wax paper. In another bowl, pour the coconut and roll the prune balls into them. This will keep for about 1 week.
