ToggleAre you looking for a refreshing Fourth of July treat that’s as pretty as it is delicious? This frozen yogurt bark is creamy, naturally colorful, and made with simple ingredients. It’s super easy to make, you can’t mess it up.
Aso, I don’t like a lot of sugar in my desserts (plus it’s bad for your A1C), so this recipe is lightly sweetened with honey, and packed with fresh (antioxidant) berries.
It makes a wonderful snack on a hot summer afternoon and it’s beautiful. Kids love it too and best of all, you can make it the day before your barbecue or celebration. Greek yogurt provides protein and calcium, while blueberries and strawberries are naturally rich in colorful plant compounds called anthocyanins and flavonoids. These antioxidants help give berries their vibrant color and are one reason I try to include berries in my diet every day if possible.
Ingredients
- 2 cups whole-milk Greek yogurt (unflavored/plain)
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries or raspberries or a combination
- ¾ cup fresh blueberries
- 4 tablespoons of chopped pistachios (if you don’t have that use chopped pecans or 1/2 cup granola and spread it out well
Optional: 1 tablespoon unsweetened shredded coconut
Directions to make yogurt berry bark (you won’t believe how simple!)
Line a small baking sheet or 9 x 13-inch pan with some parchment paper or wax paper so the bars don’t stick to the bottom.
In a bowl, stir together your yogurt, honey, and vanilla just until smooth you don’t need to blend or whip this. Spread the mixture into an even layer about ½ inch thick.
Gently scatter the strawberries and blueberries evenly over the top. Sprinkle with the nuts and coconut, if using those. Next is patience. Freeze it and wait!
You’ll have to freeze these guys for at least 4 hours or until firm. Break into rustic pieces and serve. Store the leftovers in a freezer-safe container for up to 1 month. Let the bark soften for 2 to 3 minutes before enjoying.
