This recipe is super easy. Green beans provide folate, a B vitamin your body uses for methylation, DNA production and healthy red blood cell formation. They also supply vitamin C, vitamin K, fiber and antioxidant compounds, making this humble vegetable surprisingly useful for cardiovascular, digestive and cellular health.
Ingredients for the Roasted Green Beans
1 lb fresh green beans, trimmed (One pound is about 4 cups)
1½ TBSP grapeseed oil or other oil with a high smoke point
3-5 cloves garlic, finely minced
¼ TEA salt and some black pepper if you like it
⅓ cup finely grated Parmesan cheese (freshly grated is much better and preferred because the shelf-stable ‘canned’ Parmesan in the plastic shaker is drier and won’t give you quite the same crispy, cheesy finish that we want.)
Optional: Lemon wedges
Directions: Heat oven to 425°F. Toss green beans with olive oil, garlic, salt and pepper. Spread in a single layer on a sheet pan. Roast 12 minutes, toss, sprinkle with Parmesan, then roast another 3–5 minutes until tender with some browned, blistered spots. Watch them carefully because that last minute is a doozy, you can go from virtual perfection to burnt in 30 seconds! Taste before adding additional salt because Parmesan brings plenty of its own. You can sprinkle with lemon if you want to.
Air fryer: I’m obsessed with my air fryer. You can use that too, just cook it at 390°F for something like 10 minutes, shaking halfway through. Add Parmesan during the last 2 minutes.
This dish would be amazing with my 10-minute herb-rubbed grilled chicken.
