Ingredients
3 large avocados
6 eggs
3 to 4 bacon strips, cooked and crumbled
2 Tablespoons snipped chives or dill (your choice)
Cholula hot sauce to drizzle
Directions
Oil your baking dish or cookie sheet and preheat oven to 400 degrees. To save clean up time, you can also spray foil ‘boats’ just fold the foil up for each avocado as shown in my picture above.
Cut avocados in half and remove the seed/pit. Scoop out about another 2 tablespoons (to make a boat for the eggs). Place the avocado halves on the baking dish and crack one egg into each avocado. Make sure to keep the egg yoke intact. Bake for 15 to 20 minutes until eggs are cooked. Remove and top with crumbled bacon, dill (or chives) and a drizzle of Cholula hot sauce. This is a hearty low-carb breakfast, and is definitely Paleo-friendly.
