Ingredients for 2 open-faced sandwiches
2 ounces goat cheese (alternative, slice of Havarti)
1 English muffins split open
Thinly sliced Heirloom tomatoes
2 eggs, poached
Arugula (alternative, several basil leaves)
Salt and pepper
Optional: Prosciutto ham slices
Garnish with sprouts if desired
Directions
Toast the English muffins and spread the delicious tangy goat cheese on top, then add a few slices of peppery arugula (or basil leaves if you prefer), and place a tomato slice on each. If you are using ham, put this on top next. Top with a warm poached egg, and sprinke with salt/pepper. Garnish if desired before serving.
