This is an icing that you can use for topping your quick breads or muffins.
Ingredients
4 oz softened cream cheese (use a cream cheese block, NOT the whipped cream cheese from a tub)
1 stick of UNsalted butter (this = 1/2 cup)
1 TEA vanilla extract
2 cups powdered (confectioner’s) sugar
1/8 TEA salt
Directions
Using a blender or stand up mixer beat the cream cheese together with the softened butter until smooth and creamy. add the vanilla extract, confectioner’s sugar and salt and continue to blend until smooth and consistent. This is the perfect consistency for quick breads like my Apple Cinnamon Bread. If you’d like the frosting thicker to use on a cupcake, add 4 more ounces of cream cheese. And if you don’t find this sweet enough for your palate simply add more powdered sugar, or alternatively add a little stevia powder, or maple syrup or honey.
