ToggleThis zucchini pizza is a satisfying alternative to regular pizza for those of you who follow a keto diet, or paleo-friendly diet. It’s so easy to make and you can add your own toppings if you’d like.
Ingredients for the Paleo Zucchini Pizza Bites
4 zucchini, washed and sliced lengthwise (peel if not organic)
Red tomato sauce, your choice of flavor (I used basil)
Shredded mozzarella cheese, or an “Italian blend” of shredded cheese
Optional toppings: Fresh basil, mushrooms, black olives, onions or your favorite topping
Optional seasonings: Onion or garlic powder, salt and pepper
Directions
Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper, or alternatively spray a glass baking dish with oil so the zucchini won’t stick.
Cut your zucchini lengthwise, approximately 1/2 inch thick. Arrange the zucchini slices in your baking dish.
Top each zucchini with a few spoonfuls of your tomato pizza sauce. Sprinkle with cheese and top with basil and thinly sliced mushrooms. Season as desired. Bake for 20 minutes. The longer you cook this, the softer the zucchini becomes. If you prefer a little ‘bite’ only cook it for 15 minutes.
